TODAYS OFFERING IS SO YUMMY YOU WILL THINK I AM SIMPLY MARVELOUS
RICE SALAD
(I know it sounds boring but bare with me). I found this fabulous red rice at the bulk barn. It's name is Colusari red rice #1677 we are going to transform it into a wonderful thing I promise. I took this dish to a summer solstice party for a pot luck.
1 cup red rice,
1 cup basmati rice,
1/4 olive oil,
2 tbsp orange juice (you should have enough from your fresh oranges)
2 tbsp balsamic vinegar,
1 tbsp crushed garlic,
1/2 cup raisins,
freshly ground pepper (as much as you like)
4 finely sliced green onions,
2 tbsp chopped dill,
2 tbsp chopped mint,
2 tbsp chopped parsley,
2 oranges, (remove the zest then cut oranges into segments that you will chop up)
1/2 cup chopped pecans
Cook both rices sepereatly. Why? because they cook at different speeds. I like to cook mine in chicken stock with an added bayleaf it gives it a really nice flavour. That is where a lot of rice dishes fall down and taste boring. Remember it's all about the flavour. If you are feeling really adventurous you could throw in a few chilli pepper flakes. Oh baby now your talking.
Mix the olive oil, orange juice, vinegar, garlic and raisins in a pan and bring it up to the point just before it boils. Allow this to cool. Season with salt and pepper.
Mix dressing into cooled rice gently. If you stir it like a mad fiend it will break up and look like a bunch of jack russells have been playing with it.
Now add the rest of your ingredients gently and chill.
Ta daa you're done. Easy eh! Great have a drink to celebrate. Cheers!
