Great balls of fire

GREAT BALLS OF FIRE

Well not exactly great balls of fire but defiantly balls of antelope, simmered in tomato sauce and served over whole wheat pasta. What can I say but honest to goodness home cooking that sticks to your ribs and you leave the table feeling truly satisfied. I am talking about meatballs in case you are thinking oh gross! antelope genitalia.





ANTELOPE MEATBALLS.

1 lb ground antelope
3/4 lb ground beef
1 medium onion finely chopped
1/8 cup chopped garlic
1/2 cup BBQ sauce
1 cup bread crumbs
2 eggs
1 tsp cayenne pepper flakes
salt and pepper
1/2 cup freshly chopped parsley

Mix everything together throughly and form into balls that fit nicely in the palm of you hand. If you find the mixture too wet you can add a little bit more of the bread crumbs. Test one out in the frying pan before you commit to cooking them all to see if they hold together.

Bake them for about 20 minutes at 350.

I kept mine in the fridge over night before I simmered them in some tomato sauce the next day and served them over pasta. They were very, very good!

* I also made some tiny balls so I could make a meatball and noodle soup.
