So what does this have to do with the recipe I am about to share with you. Ummmmmmmmmm absolutely nothing! But it's a great memory of our family reunion in May. We can't help being half mad but there it is.
I was a bit stumped this morning as to what to make for dinner. Busy day ahead and probably no time later to lash something together before Julian goes off to work. I had a piece of pork loin in the freezer and I didn't want to do the traditional roast pork thing. It's a winter tradition and it's now supposed to be summer. Not that you would guess by looking out of the window today.
PEANUT PORK WITH PEPPERED MANGO RICE
I dusted off the crock pot and put the pork in. With it I threw in a can of coconut milk and a sachet of peanut sauce mix from "Taste of Thai". I'm going to let it simmer away all afternoon. And serve it with peppered mango rice. Oh yes how wonderful I hear you all exclaim!
To make the rice is simple. Just cook as per instructions on the package of rice. I always use chicken stock instead of water though. It just makes it taste so much better. Then melt a little butter in a non stick pan and put in 1 diced mango and half a teaspoon of ground black pepper. Cook gently and stir. Don't let the mango break down too much or it will be a slushy mess. You want it so the chunks of mango are still defined. Then stir it in your rice gently.
