I remember it as if it were yesterday. It's been the year for market visiting for me. One of the greatest pleasures in life is going to market and taking in all the sights and sounds. Touching, smelling and caressing the produce. Bringing the precious jewels home and making something outstandingly fresh with it. Just like yesterday when a friend and I went to Links tomato farm and purchased some freshly picked tomatoes, cucumbers and peppers and then made them into a wonderfully light and healthy lunch that we stuffed into whole wheat wraps. Very, very enjoyable especially sucking on sweet melons (cantaloupes you dirty minded people) and letting the juice dribble off our chins.
This is how we made our Greek style wraps.
Take:
3 field tomatoes, seeded
2 green onions,
1/2 green pepper,
1/2 yellow pepper,
3 inches cucumber,
2 sprigs of fresh dill,
1/4 cup sliced black olives,
Chop all this up into uniformed little cubes and place in a bowl. If you are into dairy products now is a good time to crumble in a small tub of feta cheese.
The dressing:
3 cloves crushed garlic,
2 tbsp olive oil,
2 tsp red wine vinegar,
salt and pepper,
Do some mixie mix with the whole lot and fill up your wrap or pita pocket and savour the easiest lunch you made all summer. This would also be nice with some grilled chicken in it or shrimp, or any other darn thing you like. Cause remember there are no mistakes when creating something this good.
