Banana coconut cake

BANANA COCONUT CAKE WITH COCONUT HONEY YUMMY STUFF ON TOP.

So here we are on a sunny morning in November. It's supposed to get up to 18 today and I had got already to post warm cozy soup recipes on this blog site, however a change of heart has taken place and I will save the pea and ham soup for mid January when it is flippen cold outside and there is nothing else to do apart from wrap up warm in a gajillion blankets and drink soup.

So............ here we go. You will need:



3/4 cup toasted coconut 1 teas baking soda
90g butter 1 teas baking powder
1/2 sugar 1/4 cup milk
2 eggs 1 cup mashed bananas
1 cup flour

Preheat your oven to 375. Toast your coconut if you haven't already done so (keeping up so far)
for about 5 minutes and let it cool before you use it.

Cream the butter and sugar in a small bowl with your favorite power tool. (reciprical saw works well)

Now that it is all light and fluffy and you have picked out the shards of wood from the batter (I forgot to mention to clean the saw before use) beat in the eggs one at a time.

Stir in half the combined sifted dry ingredients and toasted coconut with half the combined milk and banana, then stir in remaining dry ingredients and banana mixture.

Pour into a prepared loaf pan and bake at 375 for about 50 minutes.

Let it stand for about 5 minutes before turning it out onto your wire rack.

While you are waiting for this you can make your coconut topping and for this you need:

30g butter
2 tablespoons honey
1 cup coconut

Melt the butter and honey either in a pan on the stove or the microwave and stir in the coconut.
Spread on top of you cake and there you have it. Cake with yummy stuff on top.

  2. Put it in the oven for 5 minutes at 300. C'est tout.
